“The biggest change I’ve made in this health journey is rewiring my brain to eat MOST meals at home,” Emily began in a July 9 Instagram video, where she shared a delicious recipe she noted she makes “a couple times a week.” 

“I’m not the greatest cook and I don’t have a lot of time so this is one of my favorite easy breezy dinners that I eat a couple times a week,” she captioned the post showing how she cooked up a sweet potato in the microwave then browned ground turkey in a pan, later adding salsa, garlic powder, white corn, and shredded cheese. 

“Lots of protein and healthy carbs from the sweet potato, it’s quick, tasty and there’s no mixing or measuring!” she exclaimed.

Emily concluded her post with an important note: “And I don’t count calories or macros so don’t ask what the calorie count is or how many Macros this meal has. I only count money.” 

Emily Simpson opens up about her health journey

In September 2023, the RHOC Wife reflected on how far she’s come on her health and fitness journey by conducting a Q&A session via Instagram with her followers.

“I’ve always worked out (except while filming last season I didn’t work out once and I’ll never do that again),” she wrote in response to a fan who wondered about her diet and exercise routines. “I used to work out 3-4 times a week. I walked a lot. Mostly lifted light weights. Now I work out 6-7 times a week. I always start with 20-30 minute of cardio on the elliptical (level 10) and then about an hour of weight lifting.”

Then, after a social media user asked about whether diet or exercise played the biggest part in her weight loss transformation, Emily noted that improving her eating habits had the most impact. 

“Change your diet. Change your life,” she replied.
